Anche con un focus sul gelato della salute, quello in grado di veicolare sostanze nutraceutiche e di soddisfare contemporaneamente il palato. Il Cnr \u00e8 uscito dai laboratori di ricerca e ha portato alla Mig le ultime novit\u00e0. Uno sguardo diverso sul gelato artigianale, con taglio scientifico. E con la presentazione di testimonianze, da parte di imprese, di best practices di collaborazioni pubblico\/privato.<\/p>\n<p>Particolarmente interessante la presentazione di un progetto di ricerca sull\u2019uso del gelato come alimentazione per malati in alcune patologie. \u00c8 stato dimostrato come le persone con Alzheimer possano trarre dal gelato non solo un pasto facilmente assimilabile, ma anche una serie di stimoli neurologici che altri cibi non sono in grado di trasmettere.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>I grandi eventi sportivi 2024, svelato il calendario tra ciclismo e sport invernali<\/strong><\/p>\n<p><strong><em>Alla Mig anche il \u201cGusto del Campione\u201d, testimonial Filippo Zana l\u2019uomo pi\u00f9 veloce d\u2019Italia<\/em><\/strong><\/p>\n<p>Il gelato \u00e8 territorio. E il territorio \u00e8 anche sport. Alla Mig &#8211; nello stand della Regione Veneto con la collaborazione della Fondazione Dmo Dolomiti e della Provincia &#8211; sono stati presentati i grandi eventi sportivi che saranno ospitati dalle Dolomiti bellunesi nel 2024. Con un antipasto anche nel 2023, visto che la stagione invernale offre subito, a dicembre, il gigante parallelo della Coppa del mondo di snowboard, con gare in notturna sulle nevi del Faloria, a Cortina (16 dicembre), e i Campionati Invernali Universitari Europei a Val di Zoldo (dal 17 al 22 dicembre). Poi da gennaio all\u2019estate sar\u00e0 un tripudio di sci, curling e discipline invernali, prima della tappa del Giro d\u2019Italia e delle granfondo. Spicca, tra le altre, la Audi Fis Cortina Ski World Cup, evento per eccellenza del circuito dello sci alpino femminile che quest\u2019anno stacca le 100 gare a Cortina.<\/p>\n<p>Testimonial degli eventi sportivi, Filippo Zana, a cui la Mig 2022 aveva portato fortuna: il campione italiano su strada aveva partecipato alla presentazione della maglia rosa preparata dalla Manifattura Valcismon di Fonzaso (Gruppo Castelli), proprio alla Mostra internazionale del gelato artigianale un anno fa. E poi, qualche mese dopo, ha trionfato a Palafavera, in una delle due tappe dolomitiche del Giro 2022.<\/p>\n<p>\u00ab\u00c8 stato bellissimo vincere la tappa\u00bb ha detto Zana, che sulla frazione 2024, Alpago-Bassano del Grappa ha espresso un auspicio: \u00abSperiamo di avere la condizione giusta\u00bb. Zana ha presentato anche il \u201cGusto del Campione\u201d, preparato dal mastro gelatiere Marco Reato. Un gelato al parpagnacchi (dolce tipico vicentino, terra d\u2019origine di Zana), composto da una base di noce feltrina, zeste di limone e cannella, variegato con un crumble di biscotti di farina di mais sponcio e miele.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Il gelato gastronomico nella ristorazione con le eccellenze venete<\/strong><\/p>\n<p>La seconda giornata ha visto lo stand della Regione del Veneto protagonista di due straordinarie interpretazioni del gelato gastronomico. Con il gelatiere Thomas Gallonetto e lo chef Marco Menegon abbiamo Riso del delta del Po IGP, crema di. Marroni di San Zeno DOP, radicchio rosso di treviso IGP e spuma al Formaggio Piave DOP. Ad accompagnare il piatto un gelato al formaggio piave DOP e Radicchio rosso di Treviso. Mentre il gelatiere Marco Reato e lo chef stellato Enzo De Pr\u00e0 ci hanno deliziato con la Patora, tradizionale zuppa di fagioli di Lamoncon\u00a0brunuase\u00a0di verdure. Questo piatto \u00e8 stato completato con un gelato all&#8217; Olio extra vergine di Oliva del Garda DOP e rosmarino.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Il gelato entra nell\u2019alta ristorazione: presentati i grandi piatti di \u201cdolce freddo\u201d con Gianfranco Vissani<\/strong><\/p>\n<p>Dessert o piatto a s\u00e9 stante? Il gelato si ritaglia sempre pi\u00f9 facilmente un ruolo da protagonista all\u2019interno dell\u2019alta ristorazione. Di certo, non \u00e8 pi\u00f9 solo uno snack da passeggio. Lo hanno spiegato benissimo gli chef che hanno portato il tema all\u2019attenzione della Mig.<\/p>\n<p>Qualcuno pensa che sia un dovere del grande ristorante farsi il gelato in casa. Qualcun altro ritiene invece che vada acquistato da mastri gelatieri e proposto in men\u00f9 come si fa con i vini, indicando l\u2019etichetta e la cantina di provenienza. Da questi due punti di vista diversi \u00e8 nato un dibattito stimolante per l\u2019intero settore del gelato artigianale, guidato da Antonio Mezzalira (chef glacier e docente di settore. Ospite il frizzantissimo Gianfranco Vissani, che ha sottolineato l\u2019importanza &#8211; sopra ogni altra cosa &#8211; delle materie prime usate per produrre un grande \u201cdolce freddo\u201d.<\/p>\n<p>L\u2019approfondimento sul tema \u00e8 stato corredato dalla produzione di alcuni dessert a base di gelato. Giuliano Lionello (Trattoria Al Pirio, Torreglia, e vicepresidente Fipe\/Appe Padova) ha preparato un gelato al lampone e cruble di cioccolato. Michele Cocchi (Associazione Professionale Cuochi Italiani) si \u00e8 concentrato su una cenerina al cioccolato, accompagnata da un gelato al mascarpone. Manuel Marzari (Pastry Chef Atelier MM Srl, Verona) ha proposto un gelato al lampone con bacche di montagna e marshmallow al cacao. Stefano Buttazzoni (Antica Osteria Grappolo D\u2019Oro, cuoco per la coppa del mondo di gelateria) ha portato un gelato alla mela con crumble di noci.<\/p>\n<p>Assai interessante anche il racconto degli ospiti del Giappone circa l&#8217;impiego del gelato come dessert nel Paese del Sol Levante.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Tra gelato e gelateria\u2026 l\u2019architettura. Alla Mig le progettazioni per ottimizzare il laboratorio<\/strong><\/p>\n<p>\u201cGelateria del futuro\u201d e dintorni. Perch\u00e9 non basta che il gelato sia fatto a regola d\u2019arte: deve anche essere prodotto in laboratori funzionali ad agevolare il lavoro, e venduto in locali accoglienti. Ne ha parlato l\u2019architetto Daniele Menichini, affrontando un tema strettamente connesso al lavoro delle gelaterie artigianali.<\/p>\n<p>Menichini \u00e8 entrato nel merito della progettazione e gestione della gelateria e del laboratorio con grande attenzione all&#8217;ambiente, alle risorse e all&#8217;energia in vista degli obiettivi della carbon neutrality. Una delle sfide attuali e future delle imprese del gelato artigianale \u00e8 infatti quella ambientale: sia dal punto di vista dell\u2019ecologia, sia anche dal versante energetico, perch\u00e9 poter risparmiare sulle bollette \u00e8 importante. Secondo Menichini, \u00e8 stato compiuto un primo passo importante quando le gelaterie artigianali sono andate alla ricerca di prodotti genuini, a km 0, biologici. \u00abOra \u00e8 il momento di fare un secondo passo &#8211; ha spiegato -: rendere la produzione eco-responsabile\u00bb.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Dalle Madonie alle Dolomiti, il Contest della granita siciliana alla Mig<\/strong><\/p>\n<p>Ghiaccio bollente. E ricco di sapori. Alla Mig \u00e8 tornata anche quest\u2019anno la gara della granita siciliana. Un viaggio sensoriale dalle Madonie alle Dolomiti che ha visto sfidarsi alcuni mastri gelatieri e granitieri nell\u2019arte di dare gusto a una base di ghiaccio. Ovviamente cercando accostamenti insoliti, oltre i gusti classici della granita siciliana tipica.<\/p>\n<p>La classifica finale ha visto trionfare la proposta di Gabriele Fiumara, famoso artista della granita. Dietro di lui, il bellunese Marco Reato e Roberto Leoni.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>I nuovi linguaggi nel mondo della gelateria<\/strong><\/p>\n<p>La MIG Arena \u00e8 stata protagonista di un incontro incentrato sul tema \u201cFormazione in gelateria e nuovi linguaggi artistici e mediatici.\u201d Ha esordito Manuel Marzari, pastry chef e consulente, spiegando la composizione del suo dolce: una girella innovativa alla mandorla di terra e sorbetto con lampone e pino mugo. Poi l\u2019intervento di Roberto Lobrano su corsi on line sulle opportunit\u00e0 legate alla promozione, comunicazione e formazione con i social. In chiusura due video del gelatiere bresciano Paolo Possi su come fare formazione attraverso facebook, instagram e tik tok. Mentre un momento intenso e affettuoso \u00e8 stato dedicato nello stand di Chiriotti Editori per Emilia Coccolo Chiriotti. Una persona che contribuito in modo significativo in questi decenni alla crescita culturale, etica e professionale del comparto.
