{"id":11102,"date":"2023-11-22T15:33:47","date_gmt":"2023-11-22T14:33:47","guid":{"rendered":"https:\/\/www.mostradelgelato.com\/?p=11102"},"modified":"2023-11-22T15:33:47","modified_gmt":"2023-11-22T14:33:47","slug":"origine-e-ricordo-leducational-ispanico-a-mig-2023","status":"publish","type":"post","link":"https:\/\/www.mostradelgelato.com\/en\/origine-e-ricordo-leducational-ispanico-a-mig-2023\/","title":{"rendered":"Origine e Ricordo &#8211; l&#8217;educational ispanico a MIG 2023"},"content":{"rendered":"<p>Martedi\u2019 28 novembre 2023 alle ore 10.30, nello stand di Artglace, GA e GAT, una delegazione composta dai pi\u00f9 celebri professionisti dei mestieri del gusto spagnoli, capitanati da Marco Miquel Sirvent, presidente di ANHCEA (Associaci\u00f3n Nacional de Heladeros Artesanos), doner\u00e0 emozioni uniche attraverso uno straordinario viaggio evocativo tra sapori, profumi.<\/p>\n<p>Ecco la presentazione dei Maestri che compongono la delegazione spagnola:<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Marco Antonio Miquel Sirvent<\/strong><\/h3>\n<p>Questa biografia si potrebbe intitolare: Una vita per il gelato, anzi due. Figlio di un gelatiere artigiano di Alicante, Marco Miquel inizia a lavorare giovanissimo, ma a partire dagli anni Ottanta del \u2018900 si dedica esclusivamente al gelato e nel 1982 si laurea Maestro Gelatiere all\u2019Universit\u00e0 di Alicante e dal 1986 dirige ed \u00e8 il responsabile del laboratorio di gelateria artigiana a D\u00e9nia.<\/p>\n<p>La sua formazione pragmatica non gli \u00e8 sufficiente e fin da subito inizia a frequentare corsi di specializzazione: dalle torte gelato ai semifreddi, dalle tecniche di manipolazione degli alimenti a quelle di refrigerazione; quindi, studia le formule di bilanciatura del gelato e nel 2009 si diploma Maestro e forma i \u2026formatori. L\u2019anno successivo \u00e8 la volta del Corso Esperto universitario di elaborazione artigianale di gelati e nel 2011 prende il Diploma di studio avanzato in chimica del gelato.<\/p>\n<p>Egli continua a frequentare corsi lungo tutta la sua lunga carriera, nonostante ormai sia diventato Professore all\u2019Universit\u00e0 di Alicante, docente in diversi collegi e professore della Scuola di ANHCEA*. Interessato, sempre sul pezzo, approfondisce gli studi sui sorbetti, granite ma si tiene aggiornato su tutto ci\u00f2 che riguarda la salubrit\u00e0 dei prodotti e del lavoro: dallo studio degli allergeni all\u2019aggiornamento continuo sui vari regolamenti sanitari. Formazione continua, insomma. Una chicca: Marco Miquel si \u00e8 anche diplomato in Lettere spagnole e Filologia francese.<\/p>\n<p>Dal febbraio 2017 \u00e8 tuttora presidente della *Associaci\u00f2n Nacional de Heladeros Artesanos ed \u00e8 stato Presidente in carica di Artglace (Confederazione delle Associazioni Gelatieri artigiani europee) 2019-2021.<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Adolfo Javier Romero Rodriguez (c<\/strong><strong>aposquadra)<\/strong><\/h3>\n<p><strong>\u00a0<\/strong>Adolfo Javier Romero Rodriguez, gelatiere, classe 1984, titolare di \u201cGelati Romero\u201d, 13500 Puertollano, Citt\u00e0 Reale, romenawer@hotmail.com<\/p>\n<p>Con l\u2019affacciarsi del nuovo millennio, Adolfo si occupa della produzione di gelati artigianali, continuando gli studi sul restauro che lo appassionano e, nel 2004, si diploma Tecnico superiore di restauro.<\/p>\n<p>Contemporaneamente, porta avanti gli studi sul gelato e nel 2011 si diploma all\u2019Universit\u00e0 di Alicante, dove successivamente diviene Docente in Ricerca e Sviluppo Gelato artigianale. Continuer\u00e0 l\u2019insegnamento all\u2019UnGasma Castello\u0301n (Universit\u00e0 EU) e docente all\u2019EPGB di Barcellona.<\/p>\n<p>Adolfo partecipa a numerosi concorsi e sale su vari podi, tra cui medaglia d\u2019argento al Campionato di Spagna 2012 e 2019; alla Coppa del Mondo della Gelateria nel 2016 e 2018, bronzo alle Olimpiadi Gastronomiche 2016 e alla Coppa del Mondo di Gastronomia 2018. Nel 2021 riceve il prestigioso Premio \u201cComunicacio\u0301n Cadena Ser\u201d.<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<h3><strong>M<\/strong><strong>artin Belmonte Mendez<\/strong><\/h3>\n<p><strong>\u00a0<\/strong>Personaggio combattivo. Martin nel suo profilo dichiara: \u201cMettere un granello di sabbia nella lotta contra i falsi artigiani e industriali che si pubblicizzano e spacciano per artigiani. Dimostrare le mie perizia e competenza nella combinazione dei sapori, originalit\u00e0 e creativit\u00e0. Vincolare la gastronomia all\u2019agricoltura.\u201d<\/p>\n<p>Dall\u2019ottobre 2008, Martin, pasticciere, \u00e8 proprietario di un negozio ad Almer\u00eca, Le Gourmet Carboneras. Realizza torte e si specializza in creme, mousse, biscotti, brioches, sabl\u00e9. Nel 2012 egli decide di alzare il tiro e specializzarsi in gelateria frequentando un corso base organizzato da ANHCEA a Xixona e, dopo aver frequentato altre classi, si diploma \u201cEsperto in elaborazione artigiana di gelati\u201d nel 2015. Attualmente \u00e8 proprietario della pasticceria gelateria DI MARTINO Carboneras, Almer\u00eca. Inoltre, dal 2018 partecipa alla direzione dell\u2019azienda agricola biologica di famiglia, specializzata in meloni, angurie, limoni, melograni, pithaya.<\/p>\n<p>Martin quando decide di mettersi in gioco partecipando ai concorsi, sale subito sul podio e nel 2019 \u00e8 medaglia di bronzo al Campionato di Spagna di Gelateria Artigianale. Nel 2022 \u00e8 stato assistente tecnico dell\u2019\u00e9quipe spagnola che ha partecipato alla Coppa Europa Gelato.<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Jose Manuel Marcos Candela<\/strong><\/h3>\n<p>Jos\u00e9 Marcos, classe 1979, da undici anni dirige ed \u00e8 capo produzione della Pasticceria Emozionale Crujiente e de La Gelateria ad Alicante. \u00c8 esperto a livello universitario in Elaborazione di gelati oltre ad essere Maestro pasticciere e cioccolatiere. L\u2019ultimo quinquennio del secolo scorso ha insegnato nella Scuola del \u201cGremio de Pasteleros\u201d di Alicante.<br \/>\nTra il 2016 e 2018 fa incetta di soddisfazioni: la stampa specializzata elegge la Crujiente tra le 10 proposte pi\u00f9 rilevati nel settore pasticceria a livello internazionale insieme con altre di Melbourne, New York, Parigi\u2026 La Guida Repsol elegge la Crujiente una delle tre migliori pasticcerie dell\u2019anno in Spagna. Quindi, nel 2018, partecipa alla Coppa del mondo della gelateria. Sale sul podio con i suoi compagni di squadra e si aggiudica la medaglia d\u2019argento. Ma non finisce qui. Infatti, lo stesso anno riceve il Premio Gastronomia Cadena Ser; nel 2022 consegue il Premio Solete Guida Repsol per ricevere l\u2019anno successivo l\u2019argento al Campionato del Mondo de Panettone a Milano.<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Miguel Angel Se\u00f1oris Leiva<\/strong><\/h3>\n<p>Noto insegnante di pasticceria e gelateria, Miguel Angel, attualmente dirige ed \u00e8 capo pasticciere e gelatiere alla Back Europ Spagna. Personaggio dinamico con una spiccata vena creativa, Miguel Angel ha una lunga esperienza professionale e grande capacit\u00e0 nella direzione del lavoro di squadra. Ha insegnato, tra l\u2019altro, all\u2019Hermitage \u00e9cole Valrhona con Yan Dutsche e Fr\u00e9d\u00e9ric Bau e si \u00e8 specializzato in cioccolateria e in pasticceria francese. Ha tenuto corsi di \u201cpasticceria totale\u201d con Paco Torreblanca e con Pepe Moll ha studiato e sviluppato le tecniche di pasticceria sottovuoto.<\/p>\n<p>E\u2019 docente di grado superiore di pasticceria al Gremio Maestri pasticcieri di Valencia.<\/p>\n<p>In qualit\u00e0 di membro \u201cdels Caballers del Bon Dol\u00e7\u201d ha partecipato a diversi corsi di studio con professionisti come Carles Mampel, Felip Urraca, Ram\u00f3n Morato, Joseph Maria Ribe, Pierre Herm\u00e9, Fr\u00e9deric Bau, Eliseo Tonti.<\/p>\n<p>Egli, inoltre, ha partecipato alla Coppa del Mondo della Gelateria 2018 con l\u2019\u00e9quipe spagnola, che si aggiudic\u00f2 la medaglia d\u2019argento.<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Jordi Guillem Mu\u00f1oz<\/strong><\/h3>\n<p>Celebre personaggio, lo chef Jordi Guillem ha un curriculum lungo una vita. Nasce a Tarragona nel 1977, si diploma alla scuola alberghiera di Lleida (1993) e a Cambris nel \u201996 consegue il titolo di Tecnico specialista di cucina. Jordi \u00e8 inarrestabile, prosegue gli studi, frequenta corsi di cucina creativa e nuove tecniche di cottura. Si dedica, quindi, alla pasticceria per la ristorazione e nel 2001 \u00e8 nel ristorante di Oriol Balaguer.<\/p>\n<p>Jordi, decide di fare esperienze che continuino ad aprirgli la mente e negli anni attraversa la cucina creativa francese al Moulin de la Gallette, per poi passare a ristoranti stellati quali il Ca L\u2019Anna Sant Mart\u00ed Sarroca-Barcelona, al Museo Guggenheim di Bilbao, al Mas Passamaner (diretto da Joaquin Koerper). Parte per gli Usa dove, a Chicago, si ferma qualche tempo al ristorante Elizabeth per poi approdare al trestellato Grace.<\/p>\n<p>&nbsp;<\/p>\n<h3><strong>Miguel Angel Morillo Rodrigurez<\/strong><\/h3>\n<p>Personaggio multiforme, Miguel Angel Morillo, \u00e8 specializzato in gelateria artigianale e in particolare nella formulazione del bilanciamento delle ricette. Inizia la sua carriera presso l\u2019Universit\u00e0 di Alicante nel 2006 sotto la guida di Enrique Coloma e Felix Llinares; procede gli studi approfondendo l\u2019analisi degli zuccheri, il potere anticongelante; procede negli studi avanzati in composizione chimica del gelato e le propriet\u00e0 funzionali dei componenti che lo integrano. Dopo aver conseguito il diploma in chimica nel 2011. Frequenta lezioni sulle nuove tecniche di decorazione delle torte gelato con Mario Masi\u00e1 e Adolfo Romero nel 2017.
